I managed to squeeze this recipe in just under 25 mins on the two occasions I tested it. What I’d recommend is prepping the squash and shallots then get them on the heat. While that cooks you can move onto the garlic and chilli and so on. Lovely as a speedy one pan job on it’s own but can pair with a protein of your choice too.

Ingredients

For the salad
Tofu
150g
Chickpeas
1 can (400g)
Green Lentils
100g
Spinach
150g
Almonds
2 tbsp
Tempeh
100g
Olive oil
1 tsp
Avocado
1
Chilli Flakes
Pinch

Method

Sweat the veg
  1. Heat the olive oil in a large saucepan over a high heat
  2. Add the squash and sweat, stirring regularly so it doesn’t catch, for 3 minutes until caramelising a little
  3. Add the shallots, garlic and chilli and fry for another minute until fragrant
  4. Pour in the stock
  5. Bring to a simmer, cover and cook for 8 minutes, until the squash is completely tender
Mash
  1. Uncover and roughly mash the squash in the pan with a potato masher or the back of a spoon, leaving some texture rather than making it completely smooth
Cook the pasta
  1. Add the orecchiette directly to the pan
  2. Cook uncovered, stirring regularly, for 8–10 minutes or until al dente, topping up with a splash of water if the liquid reduces too far before the pasta is cooked
Serve
  1. Divide between bowls
  2. Finish with a good crack of black pepper and the cheese
