Crispy Cheese Smashed Sweet Potato Pancakes + Chilli Fried Egg

Ingredients
For the pancakes
- Sweet potatoes |4 medium or 6 small|
- Cheddar cheese |4–6 small handfuls| plant based or vegan cheese works really well
- Salt & pepper | |
For the eggs
- Eggs |2|
- Crispy chilli oil |1–2 tbsp| I used Lao Gan Ma (pesto also works well, just add extra oil to cook the egg)
Garnish
- Creme fraiche or yoghurt | | plant-based alternative for vegan
- Pickled red onions | |
- Chilli crisp | | more to serve
- Chives or spring onion | | sliced

For the salad
Method
Cook potatoes
- Prick the potatoes all over then microwave on high until tender, around 15–20 minutes
- Smash between two sheets of baking paper with a burger press, spatula or pan
Fry potato
- Heat a non-stick frying pan over a medium high heat
- Add the cheese to the pan (no need for oil) in small rounds, roughly the same size as the smashed potato
- Top with the sweet potato
- Cook until golden and crispy then flip and cook until golden and crispy on the other side
- Do a few at a time if you have space
Fry eggs
- Wipe the pan clean
- Heat the chilli oil over a medium heat
- Crack the eggs in and cook to your liking
- I put a lid on or a bowl over for about 15–20 seconds towards the end to get rid of any bogey-like egg white
Serve
- Stack the sweet potatoes
- Top with the egg, creme fraiche, pickled onions, chilli crisp and chives or spring onion
