Smoky, charred courgettes meet sweet orange and creamy burrata in this salad. The orange-chilli dressing brings heat and acidity, cutting through the richness and tying everything together.

Ingredients

For the Salad
  1. Courgettes (zucchini) |2 medium| sliced 1.5-2cm thick on the angle
  2. Olive oil |1 tbsp|
  3. Oranges |2 large| 1 segmented, 1 sliced in half and juiced for the dressing
  4. Lamb’s lettuce |Handful|
  5. Burrata |1| Julienne Bruno Burella is a rly good vegan alternative
For the Orange Chilli Dressing
  1. Extra virgin olive oil |3 tbsp|
  2. Coconut or apple cider vinegar |2 tbsp|
  3. Chilli crisp |1 tbsp|
  4. Sunflower seeds |2 tbsp| toasted
  5. Salt and pepper | |

For the salad
Tofu
150g
Chickpeas
1 can (400g)
Green Lentils
100g
Spinach
150g
Almonds
2 tbsp
Tempeh
100g
Olive oil
1 tsp
Avocado
1
Chilli Flakes
Pinch

Method

Griddle/BBQ courgette
  1. Heat a griddle pan over a medium high heat for 5 minutes until evenly hot
  2. Combine the courgettes and olive oil in a bowl and season with a large pinch of salt and pepper
  3. Cook the courgettes for 3 minutes on each side until well charred then remove
  4. Do this in batches if necessary
  5. You can also use a BBQ for this
Make the orange chilli dressing
  1. Combine the olive oil, orange juice, coconut or apple cider vinegar, chilli crisp, sunflower seeds, salt and pepper in a bowl and whisk to combine
Serve up
  1. Plate up the courgettes, orange segments, lambs lettuce and burrata
  2. Generously drizzle over the orange chilli dressing and enjoy as a lunch, dinner or BBQ side
