Charred Chickpea Grapefruit & Peanut Salad

Social media can be a weird place because when I posted a video of this salad barely anyone saw it. Only about 5% of people who actually follow me saw it! Usually I don’t mind that at all - that’s the nature of the beast - but I did actually mind this time because it’s one of the best recipes I’ve written. The key is getting that smoky flavour into the chickpeas. I use a blowtorch which is a really handy kitchen tool if you don’t have one. The best alternative is a gas hob.

Ingredients

For the salad
  1. Chickpeas |1 × 400g tin| rinsed, drained and well dried
  2. Grapefruit |1| segmented
  3. Celery |2 sticks| sliced on an angle
  4. Coriander leaves |Large handful| roughly torn or picked
  5. Peanuts |3 tbsp| roughly chopped
  6. Mixed sesame seeds |3 tbsp|
For the dressing
  1. Lime |1| zested and juiced
  2. Plant based fish sauce |3 tbsp| or 2 tbsp non plant based fish sauce for a non vegetarian option
  3. Brown sugar |1 tbsp|
  4. Sesame oil |1 tbsp|
  5. Chilli oil |1 tbsp|
To serve
  1. Rice noodles | | cooked according to packet instructions, rinsed under cold water and drained
  2. Sambal | |
  3. Peanuts | | remaining
  4. Sesame seeds | | remaining

Ingredients

For the salad
Tofu
150g
Chickpeas
1 can (400g)
Green Lentils
100g
Spinach
150g
Almonds
2 tbsp
Tempeh
100g
Olive oil
1 tsp
Avocado
1
Chilli Flakes
Pinch

Method

Char chickpeas
  1. Add the chickpeas to a metal sieve or heatproof tray
  2. Char over an open flame on the hob or using a blowtorch until blackened in spots
  3. Allow to cool
Toast nuts
  1. Heat a small frying pan over a medium high heat
  2. Add the peanuts and sesame seeds and cook for a few minutes, stirring until lightly golden and fragrant
  3. Allow to cool
Toss salad
  1. Add the lime zest, juice, fish sauce, brown sugar, sesame oil and chilli oil to a large bowl and whisk until the sugar has dissolved
  2. Add the chickpeas, grapefruit, celery, coriander leaves and the majority of the peanuts and sesame seeds to the dressing
  3. Taste and adjust seasoning
Serve
  1. Serve the salad on top of the rice noodles
  2. Top with sambal and the remaining peanuts and sesame seeds
