The Philippines is hands down the most beautiful place I've had the pleasure of visiting. The trip came immediately after a visit to Vietnam which from a food perspective is a very tough act to follow. Dishes like this provided joy in abundance though. Veggie-fied to make it accessible to all.

The Philippines is hands down the most beautiful place I've had the pleasure of visiting. The trip came immediately after a visit to Vietnam which from a food perspective is a very tough act to follow. Dishes like this provided joy in abundance though. Veggie-fied to make it accessible to all.

Ingredients

For the Tofu Tocino
  1. Firm tofu |350-400g block|
  2. Brown sugar |75g|
  3. Salt |Large pinch|
  4. Garlic cloves |3| minced
  5. Soy sauce |1.5 tbsp|
  6. Rice vinegar |1.5 tbsp|
  7. Pineapple or apple juice |60ml|
  8. Black pepper |Large pinch|
  9. Corn flour |10g|
  10. Red food colouring |Few drops| optional
For the Rice
  1. White long grain rice |100g uncooked| cooked, cooled and dried (day old thats been chilled overnight is best)
    OR
  2. Cooked white long grain rice |250g packet|
  3. Garlic cloves |6 large| finely chopped
For Serving
  1. Fried egg | | traditional and optional

Ingredients

For the salad
Tofu
150g
Chickpeas
1 can (400g)
Green Lentils
100g
Spinach
150g
Almonds
2 tbsp
Tempeh
100g
Olive oil
1 tsp
Avocado
1
Chilli Flakes
Pinch

Method

Prepare ingredients
  1. Tear the tofu into bite sized chunks
  2. Finely chop garlic
  3. In a bowl whisk brown sugar, salt, soy sauce, rice vinegar, pineapple juice, pepper, rice flour, garlic, and a drop of red food colour if using
Marinate
  1. Add the tofu to a re-usable zip lock bag
  2. Pour in the marinade, ensuring all pieces are coated, push the air out and seal
  3. Refrigerate at least 2 hours (overnight is even better)
Cook tocino
  1. Heat a drizzle of oil in a frying pan over medium-high heat
  2. Drain the tofu, reserving the marinade
  3. Fry the drained tofu for 8-10 minutes, moving regularly, until caramelised and sticky
  4. Pour in the marinade and simmer until thickened
  5. Taste and season with salt if needed
Make garlic rice
  1. Heat a generous drizzle of oil or butter in a frying pan over a medium heat
  2. Add the garlic and cook until golden and super fragrant
  3. Add in the cooked rice and a generous sprinkle of salt and stir fry until combined and piping hot
Serve
  1. Plate tofu tocino, garlic rice, fried egg, if using, and a cheek of lime
  2. Enjoy
