Haggis Bao w/ Spicy Sweet & Sour Sauce

Ingredients
For the haggis
- Veggie haggis |400g| cylindrical shaped haggis works best, I used MacSween’s
- Plain flour |75g|
- Plant-based mayo |4 tbsp| plus a little plant-based milk
- Panko breadcrumbs |120g|
- Neutral oil | | for frying
For the bao
- Bao buns |6–8|
For the spicy sweet & sour sauce
- Chilli flakes |1.5 tbsp|
- Caster or granulated sugar |300g|
- White vinegar |160ml|
- Water |320ml|
- Ketchup |75g|
- Cornflour |50g|
- Water |75ml|
- Soy sauce or salt | | to taste
Garnish
- Roasted peanuts | | chopped
- Mayo | |
- Baby cucumbers | | sliced
- Fresh coriander | |

For the salad
Method
Prep the haggis
- Prep the day before or at least a couple of hours ahead
- Keeping the plastic on the haggis for structural integrity, slice into 6–8 neat rounds
- Freeze solid - this helps the haggis keep its shape during cooking
Make spicy sweet & sour sauce
- Add the chilli flakes, sugar, vinegar and water to a pan over a medium heat
- Heat until the sugar dissolves then stir in the ketchup until combined
- Whisk the cornflour and water together until combined
- Stream into the pan whilst whisking
- Simmer until nicely thickened
- Allow to cool then bottle and chill if desired
Crumb the haggis
- Add the flour to one bowl with a pinch of salt
- In another bowl combine the mayo, a pinch of salt and enough milk to reach a whisked egg consistency
- Add the panko to a third bowl with a pinch of salt
- Dip the haggis pieces in the flour, dust off excess, then into the mayo mixture and finally the panko so they’re well coated
Cook the haggis
- Heat a generous amount of oil in a frying pan over a medium heat until hot
- Fry the haggis on one side until deeply golden and crisp, then flip and repeat.
- Ideally the oil should come halfway up or just over on the haggis disks (deep fry if preferred)
Assemble
- Cook the bao buns according to packet instructions
- Fill with the crispy haggis, spoon over the sweet and sour sauce
- Finish with peanuts, mayo, cucumber and coriander
- Serve immediately
